This is by far the easiest and quickest salad you can make as a student while studying and staying away from your family. All you need is
- 1 cup of Couscous
- A handful of roasted cashews
- 1 Tbsp Pine nuts
- 1 Tspn pumpkin seeds
- 1 Tbsp sunflower seeds
- 1 Tbsp of raisins
- 1/2 a cucumber (chopped small)
- 1-2 medium-sized tomatoes (chopped small)
- 1 Tbsp salted peanuts
- 1 Tbsp corn (optional)
- Fresh or dried mint leaves
- 1 Tspn of lemon juice
- Salt to taste
- Black pepper to taste

You begin with boiling couscous. This is done with a ratio of 1:2. 1 cup couscous and 2 cups of water. Let the water boil. Add couscous to it and remove the pot from heat and let the couscous soak in the water. Keep it aside. Chop cucumber, tomatoes, and mint leaves. Add them to a medium-sized bowl with all nuts. Once the couscous is cold, add it to the bowl and sprinkle lemon juice on it. You can also add 1 small-sized red onion if you like. I do not like the taste of red onions sometimes so I avoided them in this salad. In the end, you can top the spice level by adding a Tbsp of garlic-chili oil and some fresh herbs like basil or parsley.
